Zucchini Chips---Thank you! Mrs. Dorraine Araiza:)
(1) zucchini sliced thinly in circles (approx 4 mm thick)
(2T) parmesan cheese
(2T) panko bread crumbs
Pam olive oil spray
Pre heat oven to 450 degrees.
1. After slicing the zucchini into uniform circles spray both
sides w/ Pam olive oil
2. Mix parmesan cheese and panko bread crumbs in bowl and
press each zucchini circle into mixture to cover it thoroughly.
3. Place on baking sheet and bake at 450 degrees for 25
minutes. Check on them at 20 minutes because some thinner sliced ones may be browning faster.These are delicious and may be dipped in 1 T fat free ranch

12 ounces linguine
12 ounces cherry or grape tomatoes, halved or quartered if large
1 onion, thinly sliced (about 2 cups)
4 cloves garlic, thinly sliced
1/2 teaspoon red-pepper flakes
2 sprigs basil, plus torn leaves for garnish
2 tablespoons extra-virgin olive oil, plus more for serving
Coarse salt and freshly ground pepper
4 1/2 cups water
Freshly grated Parmesan cheese, for servingINSTRUCTIONS:
Combine pasta, tomatoes, onion, garlic, red-pepper flakes, basil, oil, 2 teaspoons salt, 1/4
teaspoon pepper, and water in a large straight-sided skillet. Bring to a boil
over high heat. Boil mixture, stirring and turning pasta frequently with tongs,
until pasta is al dente and water has nearly evaporated, about 9 minutes. Check
for seasoning and add salt & pepper if necessary. Serve with parmesan
cheese and chopped fresh basil, if desired.
